What is an allergen matrix?
An allergen matrix is a grid with your products down the side and the 14 major allergens across the top, marked wherever a product contains an allergen. It's the simplest way for a business with several products to see — and show customers — which dishes are safe for which allergies, and to brief staff quickly.

Celery · cereals containing gluten · crustaceans · eggs · fish · lupin · milk · molluscs · mustard · peanuts · sesame · soybeans · sulphur dioxide & sulphites · tree nuts. Under UK food law you must be able to tell customers which of these are present in each product.
Keeping a matrix accurate
A matrix is only as good as the data behind it. Every time you change a recipe or a supplier, the allergens can change too — so a printed matrix goes out of date fast.
